This is a soy sauce blended with broth made from high-quality ingredients such as kombu from Rishiri Hokkaido and katsuobushi smoked bonito fillets from Mukakurazaki or Kagoshima. Dilute with the appropriate amount of water.
To make udon or soba broth, clear broth soup, or oden, dilute the soy sauce by adding five times more water than soy sauce.
Add a small amount of undiluted soy sauce to beaten eggs to make Japanese omelets (dashimaki) or boiled vegetables.
